A Christmas tradition...

I remember, since I was 4 years old, going with my parents and my sister, every year to my favorite Christams event. It was The Nutcracker... a fairy tale-ballet in two acts, three tableaux, by Peter Ilyich Tchaikovsky, and based on The Nutcracker and the Mouse King (German: Der Nussknacker und der Mäusekönig) It was the best and magical place were we all spend a quality time.

    Magic Pie ... for the Holydays!

    Did you know?

    Pumpkin is excellent for you. Pumpkins by themselves are also very low in fat and calories, and high in potassium. They also possess a fair amount of Vitamin C and other nutrients, such as Niacin, Vitamin E, Calcium and Iron.
    Pumpkin seeds is a good, very good, excellent source of nutrients according to our Food Rating System.

    If the idea of (HALLOWEEN) Thanksgiving without pumpkin pie is unthinkable, I have a little story for you tonight.

    Somewhere in in time... in a misty town of my dreams, I still see my grandmas kitchen where we, the children, would have a blasting time, just kicking around. The old wood burning stove filled with pots and pans. The smell of cinnamon and fresh baked pie, my grandmas magic pumpkin in the stove... The holiday magic in the air. 

    It was the best time of my life.

     

    Nothing more than the Pumpkin Pie and smell of cinnamon would bring that magic back. Here is my favorite Pumpkin Cheesecake Pie for the Holidays.

    CINNAMON-PUMPKIN CHEESECAKE PIE 

    Pâte Sucre (sweet pie crust)

    Prepare sweet pie crust: Roll out dough; fit into 9-inch pie plate, fluting edge of crust or decorating as desired. Place in freezer 10 minutes.

    Preheat oven to 400°F.

    Filling:

    2 (3 oz.) pkg. cream cheese, softened
    18 oz. container fresh ricotta cheese
    1 (16 oz.) can solid pack plain pumpkin
    2 large eggs
    1/2 cup light brown sugar, firmly packed
    2 tablespoons grated orange peel
    1/2 teaspoon salt
    1/2 teaspoon ground cinnamon
    1/2 teaspoon freshly grated nutmeg

    In food processor or blender, process cream cheese and ricotta until well blended and smooth.

    Add pumpkin, eggs, brown sugar, 2 tablespoons grated orange peel, salt, cinnamon and nutmeg; process until thoroughly blended.

    Pour mixture into prepared crust. Bake 15 minutes. Reduce oven temperature to 350°F. Bake pie 35 minutes longer until filling is firm in center and knife inserted comes out clean.

    Cool on wire rack.

    Topping:

    1/4 cup orange marmalade
    1/2 cup heavy cream
    2 tablespoons confectioners sugar
    1 tablespoon grated orange peel
    1 tablespoon orange flavored liqueur, optional
    2 naval oranges, cut into thin wedges
    fresh mint leaves, optional

    Spread marmalade over surface of cooled pie. In small bowl of electric mixer at high speed, beat cream and confectioners sugar until stiff peaks form. Stir in 1 tablespoon grated orange peel and orange-flavored liqueur (if desired). Swirl cream over center of pie. Arrange orange wedges around outside edge. Decorate with mint leaves, if desired.

    We all have something to give...

     

     

    You can get anything you want in life if you
    help enough other people get what they want.

    • We all have something to give.

    Most of us learn at some point in life that we need encouragement on a regular basis. We live at such hectic lifes that sometimes we feel down and discouraged. Some of us discovered the very best "recharges" for the batteries of life. It is a simple exercise.

    • Help somebody else.

    Think of an act of kindness you can do for someone. Then think of a specific someone for whom you could do it. Then do it. It is as simple as that.

    Now, you may be wondering if such a simple action can truly result in positive personal benefit. The answer is a definite "yes". When you are thinking about your action and the person or persons for whom you will act, you forget about yourself. Self-forgetfulness is the direct opposite of self-absorption... That will just ease your negative, personal burdens.   

    • It is first step to healing yourself!

    I don't remember the name of a movie, I saw a while ago, where a child came up with the idea of helping 3 people with the promise that each of them will help in return also, 3 other people... and so on. (resemble the piramid structure?) But in the name of good and kindness. 

    When you help others you really do help yourself. It is the way God designed us.
